Lockdown has brought South Africans into the kitchen to prepare meals that bring comfort and remind us of good times. And a treat here and there is ALWAYS a good idea.
Sean Loots seems to have perfected this in the form of Bodacious Peanut Butter and Blueberry Waffles. A serious winner for breakfast, lunch and even a lockdown dinner!
And now you can make them for your family and share the Magic, together.
Ingredients:
Frozen waffles ( from frozen to the oven )
Peanut butter ( as much as you want )
Frozen blueberries ( or fresh if you have them )
Maple Syrup ( Honey or golden syrup will do just fine too )
Method:
Heat oven and toast waffles as per instructions on the bag.
Place a handful of blueberries in a container and pop them in the microwave for 1 minute. You want them defrosted and a starting to ooze blueberry juice.
Once the waffles are good and toasty, plate up.
You’ll need at least a tablespoon of peanut butter ( more if you are peanut butter nut like me)
a teaspoon or two of oozy blueberries, and a drizzle of maple syrup ( honey or golden syrup will do nicely too )
Serve and enjoy!
